Grilled Fish Tacos

Want to serve more fish? Here's a fast and flavorful way.


Prep Time: 20 min Total Time: 20 Servings: 8 tacos
Ingredients
  • 1  lb firm white fish fillets, such as black drum, sea bass, red snapper or halibut
  • 1  tablespoon olive oil
  • 1  teaspoon ground cumin or chili powder
  • 1/2  teaspoon salt
  • 1/4  teaspoon pepper
  • 8  corn tortillas (6 inch)
  • 1/4  cup guacamole
  • Toppers (shredded lettuce/cabbage/coleslaw (no dressing), chopped avocado, chopped tomatoes, chopped onion and chopped fresh cilantro
  • 1/2  cup tomatillo salsa (recipe to follow)  OR  1/2 cup your favorite salsa
Directions
  1. Heat gas or charcoal grill. Brush fish with oil; sprinkle with cumin, salt and pepper.
  2. Carefully spray grill rack with cooking spray.  Place fish on grill. Cover grill; cook over medium heat 5 to 7 minutes, carefully turning once, until fish flakes easily with fork.
  3. Heat tortillas as directed on package. Spread guacamole on tortillas. Add fish, Toppers and salsa.
  4. * Optional* To make tomatillo salsa: place 2 lbs tomatillos (washed), 2 jalapenos (de-seeded), 2 cloves fresh garlic (leave peeling on to protect in oven), 2 small sweet onion (quartered) on sheet pan. Drizzle with olive oil, salt and pepper. Roast under broiler for 7-10 minutes turning frequently to prevent burning, but a little browning is good for flavor and intensity!  Squeeze garlic into blender or food processor, Place all other vegetables in food processor when cooled for a few pulses until the texture is how you like, add chopped cilantro and enjoy!!!
Tips & Notes
  • Eat Fish.....Eating lean fish is a smart choice. Many varieties can be relatively low in fat and high in protein--if broiled or baked. Skip the fried versions.
  • Substitution.....Fish tacos typically are made with corn tortillas instead of flour, but you can also use small flour tortillas. Top these flavorful fish tacos with any of your favorite condiments: shredded lettuce or cabbage, chopped tomatoes, onions, cucumbers, avocados or fresh cilantro. Serve with a squeeze of fresh lime juice.
