We remove the heads off the shrimp.
We use 1.5 measuring cup and we use Ziploc FREEZER Quart bags. We put 1.5 cups per bag, some do 2 cups, it is personal preference.
Fill a pot of water, this water is used to remove the air out of the ziploc bag:

Open the ziploc bag, and run tap water into the bag until it overflows:

Push the bag under the water line with both hands, and squish some water out of it, this "squish" removes air bubbles. While bag is still under the water, zip the bag closed: Note, I had one hand in because I had to shoot the picture with the other hand.

Squish enough water out so the bag is about 1.5 inch's thick, lay the water bag in a deep sided pan [you can stack 2 bags max]. The water bags WILL LEAK from punctures from the tail during expansion as the ice forms. YOU WILL clog your freezer drain if you do not freeze them in a catch pan [water will leech out of bags]. Once the bags are rock hard frozen, you can remove the pan.

Here is a frozen bag of shrimp which folks say are just fine 2 years later: There will be NO freezer burn. When you thaw, the bag will leak! Thaw in a bowl or deep sided pan.
