Pop heads off and devein your shrimpies In a tray mix a little beer (of your choice) and douse with old bay just to let it marinate a little In a pot pour in a can of beer and put your steamer basket on top when the beer comes to a boil, pour in your shrimp and douse with liberal doses of old bay mix in the steamer to get the old bay distributed cover and when shrimp pink to your liking, serve warm (add dipping sauce of your choice) Yum! I steam mine with beer as well and as soon as they turn pink I take them out and immediately place them in a large bowl with lots of ice and water so that they cool and stop cooking immediately. I mix 1/2 old bay with 1/2 maryland style crab seasoning, garlic, and seasoning salt. and add that after they have cooled and drained.

Captain's Mate Posts: 870 04/09/10 09:10 AM	I can never decide if I want them hot or cold so I do both! Peel & eats. Cold is just to put them on ice and then make up a cocktail sauce of Horseradish, ketchup and a few drops of lemon. I like to use Silver Spring Horseradish (Publix) as it is HOT! Hot is just prepare some melted butter. Dunk them in the butter and then dip them in Old Bay or JO Spice. I like JO#1 with less salt. JO Spice is what the larger crab restaurants are using now in Maryland instead of Old Bay. It's a small local spice company made near Baltimore Maryland and you can only find it here with difficulty. The fresh fish and crab market (fish camp) by Rose Bay near the triple bridges (Brigadoons) has it as does Gaff's meat market 4036 S. Nova Road. Last Edited By: bogman102 04/09/10 09:55 AM.
