I just have to add a comment to this poll. I felt bad voting for one over the other and here is the reason why:
As far as peel and eat shrimp went, the browns over the whites had my vote. The browns were actually 'VISIBLY' more appealing. They had a deeper, redder contrast and color and were larger in the size department. Now granted, this doesn not equate to flavour but mentally one subconciously will have higher expectations for one over the other by the simple voting with their eyes. As flavour went the brown was slightly sweeter in flavour to my tongue. I even experimented (while no one was watching of course) and touched both shrimp to my tongue without biting into them. The browns let off a sweetness even by a simple touch. The whites did not. NOW LET ME CONTRADICT MYSELF...... Franks & Glendas fried WHITE shrimp were some of the best fried shrimp I have had in a long, long time. Even over my own fried shrimp recipe (which I have been using for years and years). The fried shrimp were sweet, crunchy and yet delicate and juicy on the inside. They simply 'popped' with flavour and I am not sure why the contrast of the fried was so much different over the peel-and-eat shrimp. So there you have my $.02 not that it matters. But it was fun to type. My overall vote would be on the Fried white shrimp. But seeing how this was a peel-and-eat competition I had to vote for the Brown. I hope the white shrimp population understands the toil and grief and difficulty I had in placing this vote. fb |

Funny, you said this.
Alan's wife, Pat Canetti and I were taste testing and we said hands down the white shrimp are better "fried". We agreed for peel and eats they are bland with a sweet taste trying to poke thru the blandness. I don't eat fried shrimp often, so it is not something I would do. The little bit I got at the mini were FANTASTIC and had to commend Frank's frying skills. That oil was perfect. Yes, if somebody will go thru the mess of frying, I will eat the whites ALL day long! My reality is I am not real domestic, so simplicity works for me....a little 1.5 min sautee in EVOO/salt with lemon juice and I am done. Peel and eats are another quick meal, so for me....it is Oakie for my habits. |

Only the white shrimp were fried as this was a white shrimp event with a peel and eat comparison. All the fried shrimp were of the white variety. I unloaded all the Okies straight away into the peel and eat cook station and none were reserved for frying. My fave of the day was the smoked fish and then the buffalo fried shrimp. A great little bonus too all the fish from James and the hammerhead from Newken!

My stomach is growling for more Capt'n Frank's fried shrimp...your right, we did not fry up any Oakies. Next year, I will bring Oakies cleaned, de-shelled and ready for batter....we have to know!
Or. When we do our Oak Hill MiniNar for winter shrimping [teaching only, daytime], we will fry up some Oakies and give them a taste test. Folks need to taste the brown and pinks to motivate them to continue with us to learn how to winter shrimp. They are so darn good, folks will dip for them for sure once they get to sample their yummy-ness. I got to say it again, the food was YUMMY....and 'Bro really shared his prize fish and just took this mini to a whole new level! What a great feast it was! |

I am an Oak hill vote all the way. Keep in mind that the oakies weren't even fresh (fresh frozen, but not freshly alive) . That should have shifted the taste test in favor of the fresh whites. I must admit that the fried shrimp were awesome, but I think if compared to fried Oakies, the choice would have been as obvious as with the boiled.
