Hey folks.
This is a fantastic dish you can bake in the oven while your busy doing your vegatables on the grille or sides on the stove. Easy process!!! Small ingredient list!!! Fantastic flavours combined with layers of textures make this a winner for basically any flaky white fish. The finished product is a crunchy, crispy outside and a flavourful warm juicy center inside. The juice left over in the pan is nice for dipping bread as well. This is my twist on a McCormick and Schmidt cookbook bread-crumb recipe. Here we go.
FISH:
1 cup panko bread crumbs
1 cup progresso italian bread crumbs
2 tlb. sp. Carrabas spice mix

1/2 cup melted butter (you can substitute olive oil here for healthier choice)
Mix all ingredients together in bowl. Dip fish in seperate bowl with just olive oil. Then dip in bread crumb mixture. Place on pyrex/glass casserole dish. Bake at 375 degrees for 30-40 mins (this will depend on thickness of fish). Serve.
PICKLES:
5 Minute Pickles:
2 fresh whole cucumbers sliced
1 tbs. sp kosher salt
1 tbs. sp. sugar
1 cup white vinegar
Mixe all ingredients together. Heat in microwave for 20-30 seconds to help sugar and salt melt. Do not breath in this mixture its intoxicating. Wait till mixture cools. Poor in zip-lock baggy with the sliced cucumbers. Squish it around, put in fridge, they will be tasty in 5 mins or 5 hours. FANTASTIC TREAT!!!! QUICK AND EASY....
